Is it permissible to accept electronic contracts that stipulate the referral of disputes to non-Sharia or man-made courts, whether in entertainment programs such as games, or in contracts that stipulate attempting to resolve the dispute privately first, then resorting to man-made courts upon failure?

There is no harm in using permissible programs and games that contain impermissible conditions, such as the condition of resorting to man-made courts, because these clauses have become widespread afflictions. The Muslim, by accepting them, intends to affirm what conforms to Islamic law and to reject what contradicts it in his heart, without being pleased with it.
