Would a female student of Islamic knowledge agree to marry a young man who proposed to her, despite his different ethnicity, for fear of falling into religious or moral temptation concerning her faith or his?

If the young man is religious and of good character, there is no objection to marrying him, and his nationality does not prevent it. It is permissible to marry the poor, and Allah has promised richness to those who marry for chastity. The matter of marriage should be facilitated because it is a source of blessing. If the parents object, try to convince them through someone whose word is likely to be heard, and by making abundant supplications. If they are convinced, then الحمد لله (praise be to Allah). Otherwise, you may refer the matter to the Sharia judge. If you fear negative consequences from insisting on marrying him, especially concerning your religion, then abandoning the approval out of filial piety is good, and perhaps Allah will facilitate someone better for you.
