Is it permissible for a Christian woman, married to a Muslim, who intends to embrace Islam, to read religious books that include Qur'anic verses, with the aim of learning about Islam and becoming convinced of it?

There is no religious impediment to a non-Muslim reading books that contain Quranic verses, provided that they are respected and not subjected to desecration. However, a non-Muslim is forbidden from touching the Mushaf (definition) (the physical copy of the Quran). We advise the questioner to embrace Islam and not procrastinate, because Jesus (peace be upon him) is not a god but a human who submitted to God. And whoever truly loves Jesus should follow his true religion, which is Islam, because whoever dies upon a religion other than Islam will lose in this world and the hereafter.
