Is it permissible for my parents, who are coming from Egypt for Umrah, to enter into a state of Ihram from Jeddah after spending a day or two there, or must they go to the Miqat of Al-Juhfah to enter into Ihram?

If the parents intend to perform Umrah, they must enter into ihram when they are abreast of the miqat of the people of Egypt. It is not permissible to delay the ihram until Jeddah. However, some scholars have permitted passing the miqat without ihram for those who intend to return to it to enter ihram from there. In that case, they must proceed to the miqat of Al-Juhfah from Jeddah to enter into ihram.
