If the dawn call to prayer (adhan) is made while one is performing the Witr prayer of eleven continuous rak'ahs, should the worshipper complete their prayer, and would the Witr then be considered acceptable by analogy to the hadith: "Whoever catches one rak'ah of Asr prayer before sunset has caught Asr prayer"?

The maximum number of rak'ahs for Witr with a single salam is nine rak'ahs. The night prayer is performed two by two (rak'ahs), and when one fears the approach of dawn, he prays one rak'ah to make what he has prayed an odd number (witr). If the Fajr adhan is called while the worshiper is performing his Witr prayer, he completes his prayer. The majority of scholars have concluded that the time for Witr extends until the Fajr prayer.
