Why did the heavenly books not mention prophets or messengers from regions such as Europe, India, or China, confining their mention to prophets from the Middle East, and were prophets sent to those regions who were not mentioned?

Every nation had a messenger sent to it by Allah, as He says: "And for every nation is a guide," and "And We have certainly sent into every nation a messenger," and "And there was no nation but that there had passed within it a warner." The purpose of mentioning the messengers is to take admonition from what transpired between them and their peoples, in order to strengthen the believers in their faith, as Allah says: "And each [story] We relate to you from the news of the messengers is that by which We make firm your heart." Those prophets who were not mentioned in detail were mentioned in general terms so that we may believe in them, as Allah says: "And [We sent] messengers about whom We have related [their stories] to you before and messengers about whom We have not related to you."
