It is not permissible to eat food mixed with any part of a pig, including enzymes, because it is an impure abomination, prohibited by the clear text of the Holy Qur'an in His (the Almighty's) saying: "Say, 'I do not find in what has been revealed to me anything forbidden to a eater who eats it, except that it be a dead animal or spilled blood or the flesh of swine — for indeed, that is an abomination — or what is a defiantly disobedient animal slaughtered other than by naming Allah upon it.'" Doubt about the presence of these enzymes does not affect the ruling, as the default assumption is that foods are free from them, and one does not deviate from this default unless there is certainty or strong presumption.
