What is the ruling on dealing with what is considered ritually impure carrion, such as chicken or products containing it, when this causes hardship due to family members touching it and then touching other things afterwards?

The carrion (dead animal) is impure according to the four Imams. Allah has forbidden its consumption and described it as an abomination. Impurity is only transmitted from it if it is wet or touched by something wet. If it is dry, impurity is not transmitted from it by touching something dry. If this leads to hardship and difficulty, it is permissible to treat chicken as if it were not carrion, taking into consideration the difference of opinion and easing the strictures regarding impurities when there is widespread affliction and difficulty in being cautious, as in the hadith (definition) about dogs urinating in the mosque.
