Is the intention that was present when paying charity (sadaqah) and zakat valid, along with the question about the time of paying zakat, and is the amount saved monthly considered sadaqa or zakat on money?

Zakat al-Fitr requires an intention (niyyah), which is merely the resolve to perform the act, and its place is the heart. It is permissible to hasten Zakat al-Fitr, according to some scholars, two days before Eid al-Fitr. Some have permitted hastening it from the beginning of the month of Ramadan, or from the beginning of the (lunar) year. Therefore, Zakat al-Fitr is sufficient, and there is no need to re-issue it. The amount you used to give each month is considered charity (sadaqah), according to your intention. As for Zakat al-Mal (Zakat on wealth), it becomes obligatory when its conditions are met and requires intention at the time of its disbursement.
